One Pot Chicken and Rice

This comforting one-pot chicken and rice recipe is quick, delicious, and perfect for busy weeknights. With tender chicken thighs, flavored rice, and minimal cleanup, it’s a family favorite on repeat.

  • cups uncooked basmati rice
  • 6 chicken thighs skin-on
  • tsp mixed herbs or Italian seasoning
  • 2 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 Tbsp olive oil
  • 1 cup onion chopped
  • 1 Tbsp butter
  • 3 cups low sodium chicken stock
  • salt and pepper to taste
  • ½ cup green onions for garnish

Cooking Instructions

  • Rinse the basmati rice under cold water until it runs clear. Set aside.
  • Heat olive oil in your pressure cooker on medium heat.
  • Season the chicken thighs with salt, pepper, and the mixed spices. Sear them in the pot until browned, about 3 minutes on each side. Set aside.
  • In the same pot, sauté the chopped onions until they’re soft and translucent.
  • Add the rinsed rice and toast it in the pot for about a minute.
  • Pour in the chicken stock and return the chicken to the pot, nestling it into the rice.
  • Bring to a boil, then cover and reduce heat to low. Cook for 20–25 minutes.
  • Let rest 5 minutes before fluffing with a fork. Optionally, drizzle with lemon juice.

Notes

Top of the chicken may look dry—stir it into the rice to make it shiny again. Adjust seasoning to taste and feel free to add your favorite vegetables for extra nutrition.
