cut into small pieces

taco seasoning

bell pepper
diced, any color

yellow onion

unsalted butter

Instructions
Heat oil in a large skillet over medium heat.
Add chicken pieces and taco seasoning. Cook until chicken is no longer pink, about 6–8 minutes.
Add bell pepper and onion. Sauté for 4–5 minutes until tender. Set aside.
In a clean skillet, melt butter over medium heat. Add one tortilla.
Top with cheese, cooked chicken mixture, more cheese, and another tortilla.
Cook 2–3 minutes per side until golden and cheese melted. Repeat for remaining quesadillas. Cut and serve warm.
Notes
Enjoy with salsa, sour cream or guacamole. Leftovers can be reheated in a skillet to retain crispiness.
