Combine red onion, garlic, adobo sauce, olive oil, ancho chile powder, cumin, oregano, salt, and black pepper in blender. Blend until smooth.
Add a little water if needed to thin the marinade slightly.
Place chicken thighs in a bowl or zip-top bag and pour marinade over them. Mix to coat evenly. Refrigerate for at least 1 hour, ideally overnight.
Preheat grill or skillet to medium-high. Remove chicken from marinade and cook 5–7 minutes per side or until cooked through with grill marks.
Let chicken rest for 5 minutes before slicing or serving whole. Enjoy!
