  • 0.5 medium red onion coarsely chopped
  • 3 cloves garlic coarsely chopped
  • 2 tablespoons adobo sauce from a can of chipotle peppers
  • 2 tablespoons olive oil
  • 2 tablespoons ancho chile powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 tablespoon salt
  • 0.5 teaspoon black pepper
  • as needed water
  • 3 to 4 pounds boneless skinless chicken thighs

  • Combine red onion, garlic, adobo sauce, olive oil, ancho chile powder, cumin, oregano, salt, and black pepper in blender. Blend until smooth.
  • Add a little water if needed to thin the marinade slightly.
  • Place chicken thighs in a bowl or zip-top bag and pour marinade over them. Mix to coat evenly. Refrigerate for at least 1 hour, ideally overnight.
  • Preheat grill or skillet to medium-high. Remove chicken from marinade and cook 5–7 minutes per side or until cooked through with grill marks.
  • Let chicken rest for 5 minutes before slicing or serving whole. Enjoy!

Refrigerate leftovers in an airtight container for up to 4 days or freeze for longer storage. Serve with tacos, burrito bowls, or your favorite sides.
