  • 1 lb chicken wings separated into drummettes and flats
  • 1/2 tsp kosher salt or to taste
  • 1/2 tsp white pepper
  • 1/2 tsp baking powder
  • 1/2 tbsp neutral oil I used avocado oil

  • Start by drying the wings with paper towels for crispy skin.
  • Mix the wings in a bowl with salt, white pepper, baking powder, and oil. Make sure they're evenly coated.
  • Arrange the wings in a single layer in the air fryer basket, ensuring they do not touch.
  • Preheat the air fryer to 380°F (193°C) and cook for 25 minutes, flipping halfway through.
  • Increase heat to 400°F (204°C) and cook for the final 5 minutes until golden brown and crispy.
  • Remove the wings and let them rest for a few minutes before serving.

Notes

Serve with celery sticks and ranch or blue cheese dip. Store leftovers in airtight containers or freeze them for later.
