Ingredients
1/4 cup melted butter
2 egg yolks
2 tablespoons butter
1 cup heavy cream
11/2 cups chocolate chip cookie crumbs
2 tablespoons water
2 tablespoons sugar
6 ounces dark chocolate, chopped
6 ounces white chocolate, chopped
6 ounces milk chocolate, chopped
Direction
- Prepare the crust:
- Preheat the oven to 350°F (175°C). In a mixing bowl, mix the chocolate chip cookie crumbs with the melted butter until well combined. Press the mixture firmly into the base of a springform pan. Bake for 10 minutes, then set aside to cool completely.
- Make the dark chocolate mousse:
In a double boiler, melt the chopped dark chocolate, 2 tablespoons butter, and 2 tablespoons water together until smooth. Allow this mixture to cool slightly. In a separate bowl, beat the heavy cream until it forms stiff peaks. In another bowl, beat the egg yolks and sugar until pale and thick. Gently fold the cooled chocolate mixture into the egg yolk mixture, followed by the whipped cream. Evenly spread this layer over the cooled crust, then refrigerate for a minimum of 30 minutes. - Make the milk chocolate mousse:
Follow the same process as the dark chocolate mousse, using the milk chocolate. Melt the milk chocolate, 2 tablespoons butter, and 2 tablespoons water in a double boiler. Allow to cool slightly before folding in the whipped cream and egg yolks. Spread this milk chocolate mousse over the assembled dark chocolate layer and refrigerate for another 30 minutes. - Make the white chocolate mousse:
Repeat the same process with the white chocolate: melt it with 2 tablespoons butter and 2 tablespoons water. Allow to cool slightly before mixing it with the whipped cream and egg yolks.leaLayer the white chocolate mousse over the milk chocolate layer and chill in the refrigerator for at least 30 minutes to set - Finish and Serve:
Once all layers are set, carefully run a knife around the edge of the springform pan and remove. Serve cold and enjoy your luscious triple chocolate dessert!
